Transitioning from Nobu, Chef John embarked on a pursuit of his culinary vision, culminating in the successful launch of four restaurants within a span of five years. As the Executive Chef, he leads a talented team, fostering a collaborative environment where creativity and attention to detail thrive.
Chef John’s culinary philosophy centres on showcasing the finest local and seasonal ingredients. He believes in the transformative power of simple, high-quality products, masterfully prepared to elevate each dish. His menus strike a balance between classic techniques and modern interpretations, catering to the refined tastes of his guests.
Serendah-born Chef John Chang now pursues fine dining in Johor Bahru. He is the visionary Founder and Executive Chef of Mosaic Morsels by JC, where his passion continues to unfold since its opening in May 2024.
